Easter Sunday is right around the corner, which means brunch planning is front and center on your to do list. Fret not, we’ve got you covered with these super-simple brunch ideas that you can fix in no time!

Maple Bacon

Crispy, savory and sweet, maple bacon is sure to please even the pickiest of palate. 

  1. Preheat oven to 400 degrees.
  2. Line cookie sheet with parchment paper and lay bacon in a single later.
  3. Bake 15 minutes or until beginning to brown.
  4. Remove from oven and brush with maple syrup (about 1 tablespoons per 4 strips bacon.)
  5. Bake 5 more minutes and remove from pan to let drain.

Spinach and Scallion Quiche

This quick and easy quiche recipe is a lifesaver and is easy to adapt for other fillings. Make a couple varieties that both meat-lovers and veggies can enjoy, like broccoli and tomato or ham and swiss. Buy frozen pie crusts and soften as directed.

  1. Preheat oven to 350 degrees.
  2. Over medium-high heat, sauté ½ cup scallions in olive oil until tender then add 3 cups of fresh baby spinach and sauté 2 more minutes.
  3. In a bowl, combine 1 cup low-fat milk, ¾ cup grated smoked gouda, 3 large eggs and ¾ teaspoon salt. Whisk well. Add spinach mixture, stir and pour into crust.
  4. Bake uncovered for 35-40 minutes. One pie should serve 8-10.

Cinnamon Rolls And Sweets

For some quick sweet choices, buy packaged baked goods that you bake yourself. This is cheaper (and faster) than making from scratch, and more affordable than buying pre-cooked items. Not to mention how much more enjoyable these are hot out of the oven. I recommend cinnamon buns that come with icing on the side, crescent rolls or biscuits.

Fruit Salad

Sure you can buy cut fruit or even fruit platters at the store, but the price difference is insane. A quick way to toss together fruit salad is to choose fruits that don’t require too much chopping. Buy a few containers each of your favorite berries, I recommend a mix of strawberries, blueberries and raspberries.

  1. Rinse and cut fruit in half and toss together in bowl.
  2. Serve greek yogurt and honey on the side.

Cheese Platter

Nothing is easier or more delicious than a cheese platter. Save yourself preparation time by getting soft cheeses that don’t require cutting.

  • Simply put out some brie, fontina, and soft goat cheese and let the guests help themselves.
  • Serve with grapes, bagel crisps and crackers.
